       The other day I had a lemon tart with a layer of gelatin on top. This was fortunate because the birthday sparklers left ash over the the top of the tart. The gelatin layer came off easily leaving untainted tart beneath.   

       I'm not sure what the gelatin layer was actually for; probably either aesthetics or a way of keeping the tart fresh.
