Unlike restaurants that specialize in a category of food (steakhouse, fish house, etc...) or an ethnic variety of food (Chinese, Thai, etc...) this restaurant would cater to people who moved here from somewhere else.        calum - For one thing it lets me get a meal that wouldn't otherwise be available. There's not enough immigrants from any one part of the country to support a restaurant aimed solely at that market (believe me, it's been tried here in Florida). Grouping several niche markets into a single restaurant would give the owner a much better chance of success.
