Nope, both work as a noun but "shank" can be either. Although I suppose you could make a past tense verb out of any noun. You could hit somebody with a wrench and say you "wrenched" the guy.
Like the song says, You say shiv, and I say shank, etc.
Update: That was totally wrong. One post says a shank is made out of metal only and a shiv is made out of plastic, glass etc.
