Encapsulate individual pop rocks in a thin, water soluble, multi colored, edible gel coating.
Now suspend the candy in water, pour into an ice cube tray and flash freeze.

As the cubes melt, nebulous rainbow explosions stir your drink.
This would work best in a clear liquid.

Talk about a race condition; that'd need to be some quick flash freeze operation.

       What is a Pop rock?
Sorry I just checked - 'Space Dust' for me!

Do you really think that it would be a race to freeze [bristolz]? I figured that you could keep increasing the amount of coating to withstand water penetration until frozen.

Spray your pop rocks with a supercooled water mist. It will freeze on impact.
