Why not use one of these materials for the window into a microwave oven, instead of a piece of metal mesh?

       Possible answer to your question: they are not conductive enough. Modern electronic gadgets with touchscreen only need to handle milliwatts of power; microwave ovens routinely employ hundreds of watts of power.
