Adopt the method they use to make remote controlled cars go flying in movies after being hit by a pyrotechnic to make it look like it's getting blown up, but have drivers inside doing choreographed tricks.

As the music swells, the p.a. system announces: "Ladies and gentlemen, entering from your left, Insaniac driving the Flying Demon!" The garishly painted car screams down the track at 100 miles per hour then suddenly flies into the air preforming a perfect cartwheel and landing without slowing down. It screeches around and comes back for another pass, this time flipping on it's other axis and again, a perfect landing.

Multiple cars could drive head on towards one another with one jumping over each other, preforming aerial stunts and basically putting on an automotive tumbling act.

Insanely dangerous fun. The best kind.
